hings are certainly going well at Chilliwack's Garrison Bistro, and the "best patio in town" is definitely the place to be on a beautiful summer day in the Valley.

 

Chef Dan Cool has unveiled a new Summer menu to cater to seasonal tastes, and to make the best use of fresh, in-season local produce.

 

The Bistro is situated in the centre of the beautifully gentrifying and rapidly expanding Garrison Crossing neighbourhood in Sardis.

 

Patio season is in full swing and Garrison Bistro is the place to be. Furnished with stylish and comfortable cushioned wicker chairs, the patio faces west to a breathtaking view of Garrison Village's fountain water feature, the neighbouring green space and mountains beyond. It is the perfect setting any time of day ... especially sunset!

Still using as many fresh, local and organic ingredients as possible, the Bistro's new Summer menu features a pan-seared Duck Breast with ginger peach glaze, new made-to-order pastas, a pan-roasted Fraser River Sockeye Salmon filet drizzled with "Raspberry Fire" sauce, plus three light and fresh salads.

 

The Bistro is open for lunch daily, the new features include a house-made Veggie Burger and a pulled Duck Confit Quesadilla, alongside favourites like the BLTA Croissant and BBQ Pulled Pork Sandwich. For your sweet tooth, decadent dessert specials include a light and fluffy Crème Caramel, rotating Cheesecake flavours and the table-side flambé Cherries Jubilee. Of the time and care that goes into preparing every ingredient, "Nothing goes out the way it came in”, quips Chef Dan Cool. A cook and chef for 25 years in high quality restaurants between Puget Sound, Washington and Chilliwack, BC, Chef Dan will be sharing some of his recipes and cooking tips in upcoming radio features for the Fraser Valley's Star FM 98.3 later this year. Cool operates the Bistro with successful Chilliwack area husband-and-wife entrepreneurs Greg and Sheila Robinson.

The Bistro promises a high level of service, a positive attitude and a guest first, down-to-earth approach. Refreshing summer bar features include ice cold Sangria, signature Bloody Caesars with prawns, along the neighbourhood sensation "Pop Rocks Martini". The wine list and beer selection contain many great local BC wines and brews, along with domestic and international favourites.

The funky retro-chic dining room designed by Seeton Shinkewski Design Group contains booth and banquette table seating for 72, with patterned iron dividers enclosing a semi-circular granite surface bar, facing big LCD screens tuned to the night's game.
