Going Green For Grub
Popular bistro aims to reduce its carbon footprint

a very successful soft opening of several weeks, Chilliwack's new Garrison
Bistro will be hosting their private Grand Opening event on Saturday,
January 28, 2012. Locals are already raving about the reasonably priced,
locally, sourced menu and funky decor.
The Bistro is situated in the centre of the beautifully gentrifying and
rapidly expanding Garrison Crossing neighbourhood in Sardis.
The local food movement is gaining momentum in the culinary world. A term
has been coined to describe someone who prefers eating food that is locally
produced, not moved long distances to market; a locavore. Growing interest
in environmental sustainability and decreasing one's “carbon footprint” has
created a whole new market for locally grown food which, being so close to
farms and fresh produce in the lush Fraser Valley, makes Garrison Bistro's
“local fresh first” philosophy even more appetizing.
Of the time and care that goes into preparing every ingredient, “Nothing
goes out the way it came in”, quips Chef Dan Cool, whose wisecracking and
fun personality completely suit his moniker.
A cook and chef for 25 years in "5 and 4 star" restaurants between Puget
Sound, Washington and Chilliwack, BC, Cool operates the Bistro with
successful Chilliwack area husband-and-wife entrepreneurs Greg and Sheila
Robinson. Chef Cool made it his goal to utilize as many fresh, local and
organic ingredients as possible, to create inventive new flavours while
maintaining a high standard of quality.
The dinner menu features bistro classics like the succulent Coq Au Vin and
fresh made-to-order pastas, along with twists on current trends like the
well-presented Short Rib Sliders. The Bistro is also open for lunch daily,
with gourmet versions of lunch favourites like the Crispy Chicken Wrap in a
basil tortilla, or BLTA Croissant sandwich.
For your sweet tooth, decadent dessert specials include a Flourless
Chocolate Cake drizzled with molten chocolate ganache, and the table-side

The Bistro promises a high level of service, a positive attitude and a guest
first, down-to-earth approach. The bar features include herb-infused
cocktails, a great classic martini, plus the wine list and beer selection
contain many great local BC wines and brews, along with domestic and
international favourites. Even the flavourful coffee is local.
The brand new funky retro-chic dining room contains booth and banquette
table seating for 72, with patterned iron dividers enclosing a semi-circular
granite surface bar, facing big LCD screens tuned to the night's game.
Everyone is anxiously awaiting warmer weather to open the side patio, with
its comfortable wicker chairs and a spectacular view of the neighbouring
park and mountains beyond.
Garrison Bistro is already a hit in Chilliwack, and will likely be a popular
dining destination for foodies and locavores from all over the region.
